Minotaurs are perfect for collecting souls theres a few others offhand but, it’s been awhile since i played.

Minotaurs are for Grand Soul Gems
I don’t remember names well but most Monsters in Oblivion are the next level down in gems (i cant remember name of gem)
Then zombies and all those little guys are lesser and all those below
